Healthy inexpensive meals for the family
• CANNED SOUP MEAL
| 1 (28 ounce) can stewed
tomatoes 1 can of mixed beans ( chick peas, black eye and brown beans) 1 (15 ounce) can green beans 1 (14.5 ounce) can vegetable broth 1 tablespoon dried oregano 1 tablespoon garlic powder salt and pepper to taste 1 teaspoon dried basil 1 tablespoon dried parsley 2 tablespoons dried minced onion |
1 Puree stewed tomatoes
in an electric blender or mixer. Place tomatoes, refried beans, corn,
green beans, and vegetable broth in a large pot. Cook over a medium heat. Refried beans and tomatoes will cook down to create a base for the soup. Stir occasionally to prevent stickiness. 2 Add water as needed to prevent over-thickening. Add oregano, garlic powder, salt and pepper, basil, parsley, and minced onion. Cover and cook until mixture is heated through. Add the onions, and continue cooking until the soup is just boiling. |
• EGG FRIED RICE

1 cup water |
1 In a saucepan bring water, salt
and soy sauce to a boil. Add rice and stir. Remove from heat, cover
and let stand 5 minutes. |
• MEATLOAF WITHOUT THE MEAT
| 1 (12 ounce)
package vegetarian burger crumbles 1 (1 ounce) packet beef and onion dry soup mix 1/2 cup bread crumbs 1 1/2 teaspoons vegetable oil 2 eggs, beaten 1/2 teaspoon garlic powder, or to taste salt and pepper to taste |
1 Preheat the oven to
400 degrees F (200 degrees C). Grease a 9x5 inch loaf pan. 2 In a large bowl, mix together the burger crumbles, onion soup mix and bread crumbs. Stir in oil and eggs, and season with garlic powder, salt and pepper. Mix well to blend in seasoning. Spread into the prepared loaf pan. 3 Bake for 30 to 45 minutes in the preheated oven, or until firm. Makes 8 servings |
